The Healy Sisters

Hunza Pie

1 cup wholemeal flour
1 teaspoon of salt
1 cup of wheatgerm
4oz. butter
3-4 tablespoons of iced water

Hunza Pie

3lb potatoes
1 small bunch spinach
2 tablespoons of oil
1 tablespoon of kelp
a few carrots and onions
1/4lb cottage cheese

Make the pastry and leave in the refrigerator. Cook and mash potatoes and cook and dice carrots. Add together with oil, salt, kelp. Finely shred spinach and add to potatoes. Put layer of white sauce made with cottage cheese over filled pie-crust. (To make a white sauce, melt 2 oz butter, add enough flour to thicken, water till it becomes a smooth paste, then cottage cheese.) Top with a few onion rings and bake at 400° for 15-20 minutes, until top is brown. Serves four people, or two premies.


4lb tomatoes
1 1/4lb brown sugar
1lb raisins
2lb apples
1lb onions
½-1 quart vinegar


1 oz. ground mustard seed
1 teaspoon cloves
1 teaspoon ground ginger
1 teaspoon allspice
½ teaspoon juniper berries
½ teaspoon peppercorns
bay leaves

Chop tomatoes, apples, onions, add with brown sugar to pot, with vinegar. Bring to boil adding spices. Boil for 3/4 hour with lid on pot. Prepare sterilised glass jars with lids. Puree mixture and bottle immediately.
