Another Recipe from Maharaj Ji's Kitchen - by Linda Bach
DAHLIA (serves 8 amply)
1½ T. ghee (clarified butter)
1 cup cracked wheat
1/2 cup water
1/2 gallon milk
7/8 cup brown sugar (packed)
Warm ghee in a large pot, add cracked wheat and fry lightly until it is brown and the aroma smells delicious. Stir it constantly so that it will brown evenly and not burn. Add 1/2 cup hot water. Stir in and then add milk.
Bring to a boil and simmer lightly for 30-45 minutes, stirring occasionally until milk is reduced in volume by about 1/3. Add sugar 5 minutes before removing from heat, not sooner or it might burn.
Dahlia may be served cold, but Maharaj Ji prefers it warm. A very healthful dessert or breakfast dish, Maharaj Ji eats it twice a day when he is sick.
